This tasty recipe for marinaded mushrooms can be prepared in advance and then served on toast, freshly grilled pinchos or you could simply serve it in a bowl for people to help themselves.
350g small tasty Mushrooms
45ml Olive Oil
1 small Onion, finely chopped
1 clove Garlic, crushed
65ml White Wine
The tastier the mushrooms the better. If in doubt, reduce the amount of onion to avoid swamping the mushroom flavour. Small onions can be left whole or sliced.
Saute the onion and garlic in the olive oil until the onion is nice and soft, probably 5 - 10 minutes. Season with salt and pepper.
Add the water and the wine and simmer for 20 minutes.
Stir the mushrooms in to the mixture in the pan and let them cook for another 10 minutes.
Pour everything into a serving dish and let it cool before storing it in the fridge.
Serve on goats cheese pinchos or by itself. Parsley or chopped chives both make an attractive decoration.
