These
vegetarian soup recipes will show you that making your own soup can be
quick and easy. We often have soup as a light meal by itself as well as
a starter for a full meal
All the recipes here are
regulars in my own kitchen using whatever ingredients are readily
available in season. The better the ingredients, the better the taste
of course. Creamy Mushroom Soup
is a good example of a soup that came
about because the principal ingredient was plentiful.
Another
recipe that came about because of an abundance of ingredients, in this
case home grown, is this Tomato Soup

I'm sure
that all these recipes taste best when they are freshly made but you
can make them ahead of time and freeze them for use later.
Smooth
Leek and Potato Soup is another great favourite,
especially as a light
meal, warming and filling.
A good autumn recipe,
easy to make and delicious to eat this Squash and Garlic Soup
is thick
and creamy and less than 230 kcals per serving. What more can you ask
for in a recipe.
A great winter soup that also
makes a good meal, Filling Bean Soup
is a regular on our table. Its so
rich that it could be called a casserole instead of a soup but it has
the right qualifications to appear amongst on our site. It tastes good.
Another warming winter soup, Spicy Vegetarian
Lentil Soup came about when we were new to
vegetarian cooking. We
picked up a large bag of lentils and then wondered what to do with
them. This recipe is one of the ideas we came up with.
Sometimes
we need something that can be prepared much quicker than the last
couple of recipes. If I put my mind to it I can prepare this Minestrone
recipe in ten minutes. The realy amazing thing
is just how good it
tastes and it's healthy eating as well! This has to be the quickest of
our vegetarian soup recipes.
A weekend
break in Dublin introduced us to a simple soup, Cream of Carrot Soup,
that proved to be easy and quick to make. Yet another example taking
tasty ingredients and being kind to them!
Another
soup that is full of flavour and can be served up either hot or cold is
Avocado Bisque,
very easy to make with a minimum of cooking. Our kind
of recipe really.
A soup with a real kick, our Red
Pepper Soup has great flavour and colour and is
also very low in
calories. Roasting the ingredients seems to enhance the flavours and
makes this a quick soup to produce.
The Red Pepper
Soup gets its colour from the ingredients but our next soup gets its
colour from the way it is cooked. Try our Low calorie Onion Soup
recipe
relies on the onions being well browned for colour as well as enhancing
the flavour. This simple one of our vegetarian soup recipes is a
regular on our table.
Yet another soup with a
strong colour is Beetroot Soup,
and it has a taste to match, of course.
A quite different soup with a delicate flavour and
only 240 kcal per serving our low calorie Cauliflower Soup
recipe is
easy to make and even easier to eat. It earns its place amongst our
vegetarian soup recipes on all counts.
Another
soup with a delicate flavour, very light and also low fat, is made with
fennel bulbs. These are sometimes sold as sweet anise and they do have
a slight aniseed flavour. They can be eaten raw in a salad but they

We are very lucky to
live near the area that
produces England's finest asparagus. This seasonal delicacy has a
wonderful flavour that is brought out beautifully in our recipe for
