Warm Chutney

Vegatarian RecipeThis vegetarian recipe is for a quick and simple warm chutney that will add flavour and interest to many dishes. This chutney recipe is listed as vegetarian but it works just as well with meat dishes.

To make 2 servings

1 medium red onion, chopped 46
1 medium tomato, roughly chopped 22
5ml (1 tsp) sugar 16
10ml (2 tsp) white wine vinegar 2

Heat the chopped onion in a heavy bottomed pan or skillet, stirring to make sure it doesn't stick. I don't use any oil or butter, just cook the onion in its own juice.

When the onion has softened sprinkle on the sugar to help caramelise the mixture. Keep stirring.

Add the chopped tomato and stir in well. Add the vinegar.

Season with a little salt and pepper, stir well and serve hot from the pan.
