Subtle Pasta Sauce Recipe







Vegetarain RecipeThis pasta sauce recipe came about because we wanted a sauce that would not overpower the delicate flavour of our Goats Cheese and Honey Ravioli.

We had a couple of of trial runs that were pretty good but still not quite right and then we settled on this version. Why not try it for yourself.

To make 2 servings:
kcal
15g (1oz) Butter 108
2 cloves garlic, crushed 8
15ml (1 tbsp) flour 36
30ml (2 tbsp) dry white wine 21
10 ml (2 tsp) lemon juice 3
30 ml (2 Tbsp) reduced fat creme fraiche or sour cream 50
Salt & Pepper to taste 5
Total 231
About 116 kcal per serving

Melt the butter in a heavy bottomed pan over a low heat. Add the crushed garlic and fry gently for about a minute.

Add the flour and stir until it thickens.

Add the wine, lemon juice and creme fraiche, stirring well.

Check the seasoning, and add a little salt and pepper.

If the sauce is too thick add a little hot water and stir well.

Serve hot with your favourite dish.
