Subtle Pasta Sauce Recipe
This
pasta sauce recipe came about because we wanted a sauce that would not
overpower the delicate flavour of our Goats Cheese and Honey Ravioli.
We
had a couple of of trial runs that were pretty good but still not quite
right and then we settled on this version. Why not try it for yourself.
To
make 2 servings:

(1oz) Butter | 108 | | 2
cloves garlic, crushed | 8 | | 15ml
(1 tbsp) flour | 36 | | 30ml
(2 tbsp) dry white wine | 21 | | 10
ml (2 tsp) lemon juice | 3 | | 30
ml (2 Tbsp) reduced fat creme fraiche or sour cream | 50 | | Salt

Melt the butter in a heavy
bottomed pan over a low heat. Add the crushed garlic and fry gently for
about a minute.
Add the flour and stir until it
thickens.
Add the wine, lemon juice and creme
fraiche, stirring well.
Check the seasoning, and add
a little salt and pepper.
If the sauce is too thick
add a little hot water and stir well.
Serve hot
with your favourite dish.
