Before we started to make our own broccoli stuffed pancakes we used to buy frozen stuffed pancakes. The bought ones were nice but our own are nicer and we know exactly what is in the filling as well.
This recipe works in three stages, first make the pancakes then make the filling and finally put them together. The pancakes can be made in batches and frozen for use later but this filling does not freeze well. To make 4 broccoli stuffed pancakes, enough for 2 people, the ingredients are:

Start by making the pancake batter by mixing the flour, eggs, milk and oil together in a large bowl. You are aiming to get a nice smooth batter. Use a blender or food mixer if you have one. The batter needs to stand for at least 30 minutes before you cook the pancakes. Make 4 pancakes by pouring 1/4 cup of the batter into a hot, greased pan. Lightly brown the pancakes on both sides. To make the filling cook the broccoli until it is tender. You can steam, boil or microwave it as you wish. Melt the butter in a pan and saute the onion for 1 minute before adding the flour, milk and nutmeg. I like to mix the flour and milk together in a jam-jar used like a cocktail shaker before adding it to a hot pan to avoid lumps. Bring the mixture to the boil and keep stirring while it thickens. Stir in the cooked broccoli. Divide the filling between the pancakes, folding the pancakes over to make parcels. Put the broccoli stuffed pancakes on a lightly greased baking tray, sprinkle with the grated cheese and bake in a medium oven for about 10 minutes.
